Well Eevee has a pretty low base friendship with 50 and you need 220 for the evo. You get 2 points per level up and a few for walking a certain amount. Fainting lowers the number by 1. So if your Eevee faints not even once and you don't take any steps, you need at least 35 level ups. I hope that...

Espeon is a friendship evo during day and Glaceon should evolve after being exposed to an Ice Stone. Not a typo 😉 If it was a typo, there would have been an error message. The name is intentional

There is no additional way to speed up the game.

First or second gym? Both gyms have story connections to mines. If it is the first you either need to talk to the scientist in Kohle Town or talk to the main prof in Fels City's PCM (if I remember correctly). If it is the second, the gym is unlocked after activating the switch there.
