Its really not, I made a lot full evolved encounters available, so you dont have to evolve them all by yourself. Have a look at the Pokédex.pdf on the wiki, that will give you a great oversight on all encounters.

I just found a workaround! Deactivate the unreal time setting, plant a berry - and it should work. Edit: I updated the game file, if you load the v2.0.0 again, it should work without any extra work.

The download is a .rar file, basically the same, just a different format. But works the same.
